You know how I love easy recipes, right? Well, this puff pastry cherry turnover is just that.

You can get creative with the shape of your cherry turnover with the simple use of your choice of cookie cutters.

But for this feature, my cherry puff pastry will be mouse-eared, a treat for any Mickey Mouse Fan!

How to Make A Puff Pastry Cherry Turnover

This is an easy puff pastry cherry turnover recipe that can be made easier with an instant cherry pie filling mix.

In this recipe, I’ll share steps to make your own, especially if you feel store-bought filling is way too sweet.

Supplies Needed:

  • 2 sheets of frozen puff pastry
  • Egg wash (1 egg and about a tablespoon of milk)
  • Sugar crystals
  • 1 12-ounce bag of frozen sweet cherries
  • ⅓ cup granulated white sugarincredients needed to make a puff pastry cherry turnover
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4  tsp cornstarch (optional-to thicken the filling)
  • 4 tsp water (optional-to thicken the filling)

Things To Keep In Mind When Making Puff Pastry Cherry Turnovers

To work with frozen puff pastry sheets with ease, leave the sheets out to defrost to room temperature.

One way to test if the pastry sheets are at the right temperature is to use the cookie cutter to cut the desired shape.

In this case, the Mickey Mouse cookie cutter would be used. It should cut through the sheet easily and not have the dough stick to the cutter.

Before working with the puff pastry sheets, or while it defrosts, prepare the cherry filling.

Now the addition of cornstarch and water to thicken the filling is optional. I prefer just cooking the fruit-sugar mixture down until it becomes a jelly-like consistency.

Another tip to remember is to scoop the cherry filling to the center of the puff pastry shape and not overfill it.

Before placing the turnovers in the oven, coat the surface of each one with egg wash.

Garnish the tops with the sugar crystals, then bake for 25 minutes.

An easy recipe to make puff pastry cherry turnovers.

Ingredients

  • 2 sheets of frozen puff pastry 
  • Egg wash (1 egg and about a tablespoon of milk)
  • Sugar crystals
  • 1 12-ounce bag of frozen sweet cherries
  • ⅓ cup granulated white sugar
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4  tsp cornstarch (optional-to thicken the filling)
  • 4 tsp water (optional-to thicken the filling)

Instructions

Set the pastry sheets outside to defrost. This should be ready in about 30 minutes or so.

Prepare the cherry filling by cooking the mix of frozen cherries, sugar, lemon juice, and vanilla extract in a pan on low-medium heat

(Optional) Mix the cornstarch and water to create a slurry-like mix, and add this to the cherry mixture to thicken it quickly.

If you don't intend to use the cornstarch mixture, cook down the cherry mixture till it becomes a thicker jelly-like consistency.

Once done, set the jelly mixture aside to cool and begin prepping the outer pastry shells for the turnovers.

Preheat the oven to 375 degrees F before rolling out the puff pastry sheets.

Using the cookie cutter shape of choice, cut out 2 pastry shapes per turnover set. (You will need a pastry sheet shape on top and the bottom to envelop the cherry filling.)

Lay a set of pastry shapes on the baking sheet lined with parchment paper or on a silicone mat and an additional set aside.

Now carefully fill the center of the pastry shapes on the baking tray with the cherry filling, ensuring the filling is spooned into the center and not overfilled.

Once done, carefully place the reserved pastry cutouts over the filled ones.

Pinch the edges to seal both cutouts together. (You may use a fork to do this. This creates a pretty fringed effect on the edges,)

Finish prepping each turnover with the egg wash mixture, using a pastry brush.

Bake the turnovers for 20-25 minutes, at 375 degrees F.
