Ingredients required to make this Keto Lasagna Meat and Cheese Stuffed Peppers recipe
- Your choice of Italian sausage, beef, chicken, turkey, or meat substitute.
- Colored bell peppers
- Ricotta
- Cottage cheese
- Shredded mozzarella cheese
- Low-carb or keto marinara sauce (or regular if you’re not particular about making this a keto-exclusive recipe.)
- Italian seasoning
- Garlic powder (not garlic salt)
- Egg
- Parmesan cheese
- Salt and pepper to taste
Can I substitute ground meat for anything else?
You sure can! Switch it out with ground chicken, ground turkey, ground lamb or even meat substitute crumbles.
What to serve with stuffed peppers?
You can serve this lasagna-style recipe with garlic bread and a green salad or this delicious Fattoush.

Can you freeze stuffed peppers?
Yes!
Freezing stuffed peppers is easy; I do not recommend freezing them before cooking them.
The key to freezing meat and cheese stuffed peppers after your meal is to ensure it cools down to room temperature before wrapping each pepper in plastic wrap and then placing each stuffed pepper in a freezer-safe bag.
If you would prefer to freeze the peppers in a tray or container, I would wrap each pepper in plastic wrap and then wrap the tray/container in the plastic wrap to avoid freezer burn.

How to Make Keto Lasagna Meat and Cheese Stuffed Peppers
1. Preheat the oven to 400 degrees Fahrenheit
2. Cut the peppers in half (lengthwise) and de-seed the halves.
3. If you like that crunchy raw pepper taste, skip this step! Place the pepper halves in a baking dish and bake for 12-15 minutes.
4. While the peppers bake, lightly season (with salt and pepper) and then saute the ground meat (Italian sausage, beef, chicken- your choice!) in a saute pan or skillet, on medium heat, till it is cooked through.
5. Mix in the marinara sauce (or make your own) with the meat and set aside.
6. Take a bowl and add the ricotta cheese, cottage cheese, 1 cup of mozzarella cheese, parmesan cheese, Italian seasoning, garlic powder, and egg.
Combine all these ingredients and season with salt and pepper, to taste.
7. By now your baked peppers will be ready (or raw, your choice).
Spoon in a layer of cheese mixture and, on top of this, a layer of the meat mixture into a pepper half.
Do this for all the pepper halves.
8. Once done, generously top the meat mixture with the remaining mozzarella cheese.
9. The meat and cheese stuffed peppers are ready to bake.
10. Pop the tray into the oven for 15-20 minutes or till the peppers are tender enough for your liking.
11. Serve as is or with the recommended sides above.
