Peanut Butter Oatmeal Cakies

Ingredients

  • 1/2 cup unsweetened organic applesauce
  • 3/4 cup raw cane sugar
  • 1/2 cup organic peanut butter
  • 1 egg
  • 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup instant quick cooking oats
  • 1 cup almond shavings/bites
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. While this is heating, in a bowl, mix together the dry ingredients- flour, baking soda, salt.
  3. Once mixed, add the oats to the mix and set aside.
  4. In your mixer (or in a bowl), mix together the applesauce, sugar and peanut butter.
  5. Once well blended, add the egg and mix well.
  6. Add to this mix, your dry mix, almonds and chocolate chip. Mix well.
  7. On ungreased cookie/baking sheets, drop tablespoon sized nuggets of the cakie mix. (Leave atleast 3/4 inch space between each cookie)
  8. Bake for 10-12 minutes, till golden brown.
  9. Serve hot or wait till the cakies cool and then pop these into the refrigerator, to serve cold. (My kiddos like their cakies both ways. I , personally, would suggest placing uneaten cooled cakies in the fridge because these are moist and then tend to get a little sticky if left outside.)
