Peanut Butter Protein Balls

Ingredients

  • 1/2 cup peanut butter
  • 1 cup steel-cut oats
  • 1/4 cup honey
  • 1/2 cup regular or honey roasted cashews, almonds, walnuts
  • 1/4 cup semi-sweet dark chocolate chips
  • 1/4 cup shredded coconut (dried)

Instructions

  1. Place all the ingredients in a bowl and mix till combined.

  2. Place a sheet of wax paper on a plate and set aside.

  3. Take 2 tbsps of the mixture and roll approximately 2 inch sized balls.

  4. Place the ball on the wax paper.

  5. Continue forming balls till the mixture is all used up. (You should be able to make 9-10 balls.

  6. Serve as is or refrigerate for about an hour, to serve chilled.
