Carrot Fig Pecan Bread {Recipe}

Ingredients

  • 3/4 cup sugar
  • 1/2 cup grapeseed oil
  • 2 eggs
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon powder or you can do a 1/4 tsp cinnamon, 1/4 tsp nutmeg mix
  • 1 cup grated carrots
  • 1/2 cup chopped pecans
  • 1/4 cup finely chopped/grated dried unsulphured Calimyrna figs

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and prepare your loaf pan (greasing and flouring the same) before you start. {I used a 9 x 5" loaf pan)
  2. Take your dry ingredients (flour, baking soda, baking powder, salt, pecans + cinnamon) in a bowl and mix well. Set this aside to use after mixing the wet ingredients.
  3. In your mixer, mix the sugar and grapeseed oil well.
  4. To this, add the eggs and whip for another 1-2 minutes.
  5. Now add the dry ingredients and blend well.
  6. Finally add to the mixture, the figs and carrots and give your mixture a final 30 second - 1 minute stir.
  7. Now pour your mixture into your prepare loaf pan
  8. (Optional- if you like a sugared crust, generously sprinkle sugar on top before popping the same into the oven)
  9. Place your loaf pan into the oven and check back in 45 minutes to see if it's done (Do the toothpick or clean fork test)
  10. Take out of the oven when done and slice when the loaf cools a bit.
