Easter Blondie Bites

Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp good vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Chocolate frosting or Noccialata chocolate spread
  • 1 cup shredded coconut
  • 1 bag of mini chocolate eggs

Instructions

  1. Preheat the oven to 350 degrees F
  2. Place the mini cupcake wrappers in the mini muffin pan before starting on the batter.
  3. In a bowl, mix the all purpose flour, baking powder and salt together.
  4. Then take a saucepan and melt the butter in the same.
  5. Once melted, take off the stove and mix in the sugar.
  6. Once blended add the eggs and vanilla extract. Mix well.
  7. Add the dry ingredients and combine well. (You don't need a stand or hand mixer to do this. A fork works just fine.)
  8. Now pour the batter into the mini muffin wrappers 3/4ths of the way.
  9. Bake for about 15-20 mins. (Do the toothpick test to ensure it's ready. Don't overbake)
  10. While the mini muffins are baking, spread the cup of shredded coconut on a cookie tray and place it in the oven. Wait for 2-3 minutes till you see the coconut shreds browning. Remove before it browns too much.
  11. Once the muffins are ready, remove the pan from the oven and set aside to cool.
  12. Apply a thin layer of your choice of homemade chocolate frosting or Noccialata to the tops of each mini muffin.
  13. Sprinkle a little of the toasted coconut on the same.
  14. Take a knife and make a small slit on the top of each muffin, to help each chocolate egg sit easily on the same.
  15. Set aside a few blondie bites for yourself before serving the same. These will be finished in no time once they hit the table!
